The yeast that helps bread to rise is a living organism extremely sensitive to heat. Because of this, the temperature at which the dough is kneaded, and any temperature fluctuations while the dough is rising, will affect the quality of the finished bread.
If the temperature of the dough is too low, the yeast activity will slow down and, if too high, the yeast will overwork (if too hot, the yeast will die).

Oh my word..... what a machine this is, after deliberating for weeks about disguarding my old Morphy Richards machine and investing in a Panasonic, (which i had read so many reviews about)but i thought they were costly, i decided to take the bull by the horns and invest in one. I received it today and set about making my 1st loaf as soon as i got it!!! the result is i have a perfect loaf, which the paddle in the breadmaker fell out of as it should with out me having to "dig it out" the bread was white as opposed to the creamy heavy look i got with the old machine and it actually smelt like bread you get from the bakers shop. if you have ANY doubts about how good these machines are... forget it, they are brilliant, best move i made for a long time was buying this machine.... thankyou panasonic(Read more)
